Deep Purple Rice Salad

 

1 cup purple (black) rice, uncooked

2 cups broth (vegetable or chicken)

2 Tbs. lemon oil (or olive oil + lemon zest)

½ cup toasted hazelnuts, roughly chopped

1 cup dried cherries, chopped

1 cup purple cabbage, finely chopped

1/4 cup fresh parsley, chopped

Kosher salt and black pepper, to taste

crumbled blue cheese for serving (optional)

 

Combine purple rice and broth in a pot. Bring to a boil, reduce to a simmer, cover, and cook 30–35 minutes until tender and the broth is absorbed. Fluff and let cool slightly.

 

Toast the hazelnuts, halve the cherries, shred the cabbage, and chop the parsley.

 

Drizzle the warm rice with lemon oil, then season generously with salt and pepper.

 

Fold in cherries, hazelnuts, cabbage, and parsley until evenly distributed.

 

Taste and adjust seasoning. Serve warm or at room temperature, topped with crumbled blue cheese, if desired.
