Jalapeño‑Chip Green Chile Enchilada Layer Bake

1 lb. pork sausage
1 14oz. can green chile enchilada sauce
8 oz. cream cheese
8 oz. Monterey Jack cheese, shredded
4 large burrito-sized flour tortillas
8 oz. sharp cheddar cheese, divided and shredded
4 oz. crunchy, toasted jalapeño chips
fresh cilantro
fresh lime juice

Preheat the oven to 425°F.

In a large pot or Dutch oven, brown the sausage on medium heat until the fat has rendered.

Stir in the enchilada sauce (and additional salt to taste) until the pork is thoroughly coated with the sauce and cooked through. Reduce the heat to a simmer.

Add the cream cheese and stir continuously until melted and incorporated.

Next, stir in the Jack cheese.

Remove from heat.

Spoon a Tbs. of the pork green chile enchilada sauce over the bottom of an 8x8” baking pan.

Spread evenly so that all surfaces of the bottom of the pan are covered.

Top with tortilla and cover with ½ of the cheddar cheese.

Top with another tortilla and ½ of the green chile mixture.

Layer another tortilla and the remaining cheddar cheese.

Finally, add one more tortilla and the second half of the green chile.

Bake for 20-25 minutes, until bubbly and golden brown.

Remove from oven and immediately top with the jalepeño chips, spreading evenly.

Allow to cool before slicing, serving, and topping with fresh cilantro and a hint of lime juice.
