Hatch Green Chile Butterscotch Cookies

Some recipes make perfect sense from the very first glance. Chocolate and peanut butter. Apples and cinnamon. Strawberries and cream.

But then there are my recipes.

I tend to create things that make people pause, wrinkle their nose, and ask, "Wait... you're putting what in cookies?"

To which I can only smile and reply, "Trust me."

If you've followed my kitchen adventures for any length of time, you know I have a habit of wandering off the beaten path. I love taking ingredients that have absolutely no business being together and somehow convincing them to become friends. This is what my family lovingly refers to as an "Ashley recipe" and these Hatch Green Chile Butterscotch Cookies are the perfect example.

It all started with an incredibly thoughtful gift from a neighbor: a beautiful batch of roasted Hatch green chiles. They were smoky, slightly sweet, and carried just enough heat to keep things interesting. I used some in savory dishes, of course, but I couldn't stop wondering what would happen if they crossed over into dessert territory.

The answer?

Pure magic.

The rich sweetness of butterscotch creates a warm, caramel-like backdrop that plays beautifully against the earthy roasted flavor of the green chiles. A sprinkle of coarse salt brings everything into balance, creating that irresistible sweet-and-salty combination that keeps you reaching for "just one more."

The heat doesn't overwhelm. Instead, it arrives quietly at the end, dancing around the edges of the sweetness and making every bite more intriguing than the last. Even a touch of masa corn flour adds another layer of sweet, earthy depth.

These cookies are conversation starters.

They're the cookie people cautiously try because they're curious.

Then they immediately reach for a second.

The texture is soft and chewy, studded with pockets of melted butterscotch and unexpected bursts of roasted chile. Every bite tells a slightly different story. Sweet. Salty. Smoky. Buttery. Warm.

Impossible to explain.

Impossible to stop eating.

I think my favorite recipes are the ones that challenge expectations. The ones that remind us that creativity belongs in the kitchen and that sometimes the strangest ideas become the most memorable.

These Hatch Green Chile Butterscotch Cookies shouldn't work.

But they absolutely do.

And they may just become your new favorite "trust me" cookie, too. 💚🍪
