Just One Slice: Giant Pecan Pie Cookies

Fall has arrived. 🍁🍂 This is my favorite season that blows in the atmosphere that sneaks up on you in the early morning with air and makes you crave crisp breezes, cozy sweaters, and warm spice. During our daily catch-up chat, my dear friend Valerie sighed and mentioned she was craving "just one slice" of pecan pie.

Naturally, as someone whose love language is baking, I instantly offered to bake her a full, warm pecan pie.

She immediately declined: "Please don't. It will go to waste. I just want one slice."

Now, I could have easily baked her a mini pie and gifted the rest to the neighbors. But Valerie is special. She didn't need a slice carved out from a larger whole, left to feel like an afterthought. She deserved something crafted specifically for her: a treat where she could have everything in a single, perfect bite. Every bite, every cookie crumble, made entirely with her in mind.

So, I headed to the kitchen and came up with these: Giant Pecan Pie Cookies.

These aren't your typical thin, delicate cookies. They are monstrous, decadent bakery-style creations designed to satisfy that deep fall craving.

The Upgraded Sugar Cookie Base: Thick, soft-baked, and slightly tender with a touch of brown sugar and vanilla bean, acting as the sturdy "crust."

The Gooey Pecan Pie Center: A rich brown sugar, butter, and maple reduction loaded with deeply toasted pecans that bakes up delightfully sticky and rich.

The Best of Both Worlds: All the nostalgic, gooey goodness of a classic Southern pecan pie nestled right inside a giant cookie.

Gooey Pecan Filling:
1 ½ cups raw pecans, finely chopped
3 Tbs. butter
½ cup light brown sugar, packed
2 Tbs. dark corn syrup
2 Tbs. heavy cream
1 tsp. vanilla extract
2 large eggs
pinch of fine sea salt

Cookies:
½ cup butter, room temperature
14 oz. sweetened condensed milk
2 tsp. vanilla extract
2 ¾ cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
½ tsp. kosher salt
1 cup finely chopped pecans

In a skillet over medium heat, melt 3 Tbs. of butter. Add the chopped pecans and toast for 3–4 minutes until fragrant. Stir in the brown sugar, corn syrup, heavy cream, vanilla, and salt. Simmer for 2 minutes, until thick and bubbly. Remove from heat and temper in the eggs, stirring constantly. Allow to cool completely.

In a large bowl or stand mixer fitted with the paddle attachment, beat the softened butter and sweetened condensed milk on medium speed for 2–3 minutes, until light and fluffy. Add the vanilla.

In a separate bowl, whisk together the flour, baking soda, baking powder, vanilla, and salt. Slowly add to the wet ingredients, mixing on low just until a soft dough forms. Fold in the chopped pecans.

Scoop large portions of dough (about ¼ cup each). Press your thumb or a spoon into the top of each ball to create a deep well/nest in the center.

Spoon a generous tablespoon of the cooled pecan pie filling into the center of each cookie nest. Chill the shaped dough balls in the refrigerator for at least 30 minutes (this keeps them thick and prevents over-spreading).

Preheat the oven to 350°F and line two large baking sheets with parchment paper.

Space the chilled cookies at least three inches apart.

Bake for 12–14 minutes, or until the edges are lightly golden and set, while the gooey centers remain slightly soft.

Let them cool on the baking sheet for 10 minutes before transferring to a wire rack.

Serve warm with a cold glass of milk or a hot mug of dark roast coffee.
