Often, special desserts are meant for birthdays, showers, and grand celebrations. But these Mini Almond Buttercream Cupcakes were made simply because joy itself felt like reason enough.
Following a familiar recipe I created long ago, I wanted something unfussy and reliably delicious for the soft, tender, and lightly sweet cupcakes. But it was the buttercream rosettes that truly made them shine.
Buttercream That Feels Like a Treat All Its Own
The buttercream was the real star: a fluffy, cloud‑light swirl made with plenty of grass‑fed Kerrygold butter and a lovely dash of almond extract. Whipped until airy and silky, it had that irresistible balance of richness and fragrance: simple ingredients transformed into something decadent.
For the second round, I added just a touch of pink food coloring. Suddenly, the rosettes bloomed in two tones: creamy white and intensely pale pink. Side by side, they looked like tiny blossoms perched on each cupcake.
A Dusting of Gold
To finish, I showered the tops with golden sparkle sugar. It caught the light in the most charming way. The little flecks of shimmer that made the cupcakes look celebratory even without an occasion. They brought actual smiles – only because they were both beautiful and delicious.😋

There was no event, no gathering, no milestone. Just pure delight. Just fun. Just the pleasure of making something lovely and sharing it with whoever happened to be nearby.
Joy doesn’t need a reason. Sometimes the sparkle is the occasion.
Mini Almond Buttercream Cupcakes
Vanilla Mini Cupcakes:
1 cup all-purpose flour
½ cup granulated sugar
½ tsp. baking powder
¼ tsp. kosher salt
¼ cup butter, melted
½ cup whole milk
1 large egg
1 tsp. vanilla extract
Chocolate Mini Cupcakes:
¾ cup all-purpose flour
½ cup granulated sugar
¼ cup unsweetened cocoa powder
½ tsp. baking powder
¼ tsp. kosher salt
¼ cup butter, melted
½ cup whole milk
1 large egg
1 tsp. vanilla extract
Almond Buttercream
2 cups grass‑fed Kerrygold butter, softened
5 cups powdered sugar
2 Tbs. heavy cream
2 tsp. almond extract
pink food coloring
golden sparkle sugar for dusting
Preheat oven to 350°F. Line a mini cupcake pan with paper liners.
For the Vanilla Cupcakes: Whisk together flour, sugar, baking powder, and salt. Add melted butter, milk, egg, and vanilla; stir until smooth.
For the Chocolate Cupcakes: Whisk together flour, sugar, cocoa powder, baking powder, and salt. Add melted butter, milk, egg, and vanilla; mix until combined.
Spoon each batter into mini cupcake liners in the cupcake pan, filling each liner 2/3 full.
Bake for 12–14 minutes until tops spring back. Cool completely before frosting. (CHILL for ease).
For the Almond Buttercream, beat the butter until fluffy. Add powdered sugar gradually. Add cream and almond extract. Whip until light and airy.
Remove ½ the buttercream and beat a few drops of pink food coloring into the second half.
Pipe rosettes onto cooled cupcakes.
Dust with golden sparkle sugar for a shimmering finish.
