🍪 Potato Chip Butterscotch Cookies

Simple Potato Chip Butterscotch Cookies that begin with a smashed family‑sized bag of salt‑and‑vinegar chips and a spark of mischievous inspiration create an unbelievable cookie dessert.

I made these today, and I’m still laughing at how wildly addictive they are. Sweet, salty, crunchy, buttery, tangy - they hit every pleasure center at once. They’re the kind of cookie you taste, blink twice, and immediately reach for another because your brain can’t quite believe what just happened.

🍪 The Cookie That Stops a Service Call

My first taste‑tester wasn’t even planned. The Overhead Door Company service man happened to be here while the cookies were still warm from the oven. I handed him one. (Of course I did)! He took a bite, paused, and said:

“WOW! Now I need an ice‑cold glass of milk.”

Naturally, I offered him one. He laughed, declined, and said he’d be heading straight to 7‑11 to complete the experience. That’s how you know a cookie has done its job.

🧂 How They Come Together

These cookies are gloriously simple—easy peasy, as they should be for something this fun.

  • A bag of salt and vinegar chips, smashed into glorious rubble
  • Quick‑bake sugar cookie mix
  • Eggs
  • Shortening
  • A drizzle of milk
  • A handful of butterscotch chips

The dough comes together in minutes. The chips fold in like crunchy little confetti. And the butterscotch melts into pockets of caramel sweetness that balance the tang of the chips in the most magical way.

✨ Why They Work

They may sound strange, but the sweet‑and‑savory crunch creates a flavor combination that’s honestly unforgettable. It’s the same logic that makes chocolate‑covered pretzels irresistible, or kettle corn impossible to stop eating—your palate loves contrast.

These cookies deliver contrast in spades.

Warm from the oven, they’re soft with crisp edges, studded with salty shards and caramel chips. Once cooled, they develop that perfect chewy‑crunchy texture that keeps you coming back for “just one more.”

🌟 You Must Give Them a Try

If you’re a fan of playful baking, unexpected flavor mashups, or anything that makes people raise their eyebrows before falling in love, these cookies are your next adventure. They’re crowd‑pleasers, conversation starters, and, apparently, milk‑cravers.

Bake a batch. Share them warm. Watch people’s faces. It’s half the fun.

🍪 Potato Chip Butterscotch Cookies

Warm, sweet‑and‑savory, and wildly addictive — these cookies are the kind of treat that makes even a service technician stop mid‑bite and declare he needs a glass of milk. They’re easy, quirky, and unforgettable.

1 family‑size bag salt & vinegar potato chips, smashed into crumbs

2 pouches quick‑bake sugar cookie mix

½ cup shortening (1 stick)

2 large eggs
1 cup brown sugar

2 Tbs. milk

1 ½ cups butterscotch chips

Preheat oven to 350°F and line baking sheets with parchment.

In a large bowl, combine sugar cookie mix, shortening, and eggs until a soft dough forms.

Fold in smashed salt & vinegar chips and butterscotch chips. Add a drizzle of milk only if the dough needs moisture.

Form rounded spoons of dough and then flatten before placing onto prepared baking sheets, spacing them about 2 inches apart.

Bake for 12-14 minutes, until edges are lightly golden and centers are set.

Let the cookies cool slightly before serving. Or offer them warm to unsuspecting visitors for maximum delight. Be sure to offer a large glass of cold milk.
