🍅 Sweet & Spicy Harissa Garden Tomato Sauce

With that gorgeous, late‑summer and early fall swagger we all crave this time of year, you can capture that romance on your palate and with every meal with this sweet‑spicy romance of a tomato sauce.

A balsamic‑kissed, harissa‑warmed twist on a classic -

Freshly gathered tomatoes from the garden taste entirely different from store-bought produce and behave differently, and soften differently. They are just: different. They carry the sun in their skins.

This homemade sauce began as your usual homemade tomato base, but somewhere between the simmering and the stirring, it turns into something far more playful.

You let the tomatoes cook down until they slump into themselves, along with sautéed onions and pancetta for rich depth, deep and velvety. Then comes the balsamic vinegar, added at just the right moment, giving the sauce a sweet tang that feels like a little secret tucked into the pot. This is a cozy, aromatic backbone of a sauce that makes any dish feel like a celebration at home

But the real twist is the harissa spice. A few hefty teaspoons, bold and unapologetic, transform the sauce into a sweet‑and‑spicy love affair. The balsamic lifts, the harissa warms, the pancetta grounds, and the tomatoes tie everything together with their garden‑fresh brightness.

The result is a sauce that doesn’t just coat whatever you serve it atop; it romances it. Pasta, roasted vegetables, grilled chicken, crusty bread - everything tastes a little more alive under its glow.

🍅 Sweet & Spicy Harissa Garden Tomato Sauce

2 Tbs. extra virgin olive oil
2 oz. uncured pancetta pieces
1 small yellow onion, minced
5 large homegrown tomatoes, cored and chopped
1 tsp. kosher salt
½ tsp. freshly ground rainbow peppercorns
12 oz. canned tomatoes, chopped and in juice
1 Tbs. balsamic vinegar
2 tsp. raw sugar
2 heaping tsp. harissa spice

Heat the olive oil in a large pot or Dutch oven.

Once simmering, add the pancetta and onions, as well as the salt and pepper.

Brown the pork, stirring continuously.

Add the chopped tomatoes and cook on high for about 15 minutes, stirring every so often, keeping covered.

Next, add the canned tomatoes.

Reduce to a simmer.

Cook the mixture down on low for 35-45 minutes, until much of the liquid has absorbed.

Add the balsamic vinegar, sugar, and harissa spice.

Continue cooking down until the mixture is thick and sweet.

Enjoy over anything and everything, or just on its own.
