If you’re a follower of the blog, this recipe arrives in your kitchen like déjà vu: familiar in spirit, yet entirely new in form.
Ever since the Blueberry Black Pepper Tarte I made for my parents’ 50th anniversary became the unexpected star of the celebration, I’ve been dreaming of creating another dish that walks that delicious tightrope between dessert and appetizer, sweet and savory, comfort and curiosity.
This Cranberry Tomato Pecan Galette is exactly that: a creation that refuses to be defined, and delights in its own duality.
It begins with a crust that feels like a secret handshake between pastry and confection: candied pecans, dried cranberries, and a classic galette dough pressed together into a rustic, golden base. Inside, a layer of tart mascarpone brings creamy brightness, kissed with powdered sugar and vanilla for just enough elegance to whisper “dessert.” Then comes the unexpected twist: Cranberry Wensleydale Cheese, folded into the filling and baked until it melts into a gorgeous, ruby‑flecked tapestry.
But the real magic happens after the bake.
Once cooled, the galette becomes a canvas for a topping that is as surprising as it is irresistible: vine‑ripened cherry tomatoes, tossed with crumbled Cranberry Wensleydale, chopped candied pecans, a few more dried cranberries, lemon olive oil, coarse sea salt, and freshly ground pepper. It’s a combination that shouldn’t work – but it absolutely does. The savory tomatoes meet the sweet cranberries, the creamy cheese meets the bright citrus, and the pecans add a crunch that ties everything together in a single, mind‑blowing bite.

Maybe the answer is simpler. Maybe we don’t need to name it for the world at all. Cranberry Tomato Pecan Galette 🍅
Crust:
1 cup candied pecans
½ cup dried cranberries
1 stick butter, ice cold and chopped into small pieces
1 large egg
2 cups all-purpose flour
1 Tbs. white vinegar
In the bowl of a food processor, pulse the candied nuts into a fine powder. Add the cranberries and process until fully chopped.
Add the butter, egg, and flour. Process into a fine crumb.
Add the vinegar and process until a dough ball forms.
Transfer the dough ball to a piece of parchment paper, topping with another piece.
Roll into a rough 11” round.
Place the round, still on the parchment, into a 9” cake pan.
Cranberry Wensleydale Mascarpone Filling:
8 oz. Mascarpone cheese, room temperature
3 oz. Cranberry Wensleydale cheese, chopped into small pieces
2 large eggs
¾ cup powdered sugar
1 tsp. vanilla extract
¼ tsp. coarse sea salt
¼ cup dried cranberries
Preheat the oven to 400°F.
Process all ingredients (except the cranberries) together in the food processor until smooth and creamy. Sprinkle the dried cranberries over the top of the filling.
Fill the crust and fold the edges over into the center of the round.
Bake for 20-25 minutes, until the crust is golden brown.
Remove from the oven and cool for several hours, or overnight. Make sure all things are set and solid.
Topping:
¾ cup cherry tomatoes, ripened and halved
3 oz. Cranberry Wensleydale, crumbled
¼ candied pecans, roughly chopped
¼ dried cranberries
2 Tbs. lemon olive oil
¼ - ½ tsp. coarse kosher salt
¼ - ½ tsp. freshly ground pepper
Combine all the topping ingredients. Gently toss together in a medium bowl and marinate for several hours.
Transfer the cooled (room temperature) and set-filled crust to a serving plate.
Spoon the topping over the galette and slice to serve.
Amazing – above all bounds.
Serve with coupes of bubbly 🥂for maximum sweet and savory pleasure.
