It’s a superfood. Yes, it really is.
Just “Google” chia pudding and I promise you all the results will incorporate the words: healthy, superfood, delicious, amazing, raw, treat, meal, snack, incredible, nutritious, cleansing, Gwyneth Paltrow, Yoni Jade Eggs 😂🤣😂🤣😂🤣😂 , etc. (well, maybe not the last one, but you get the picture).

Made with chia seeds, coconut milk, cooked apples, chopped dates, and dried cherries, this healthy breakfast/snack/dessert recipe is a mini spa-heaven escape. Top it with juicy fresh fruit or swirl in some jam or honey, if you like. You do YOU. Enjoy you. Cherish YOU. (And, if that includes a purchase of Jade Eggs, do that too! 😉)

Apple Date Cherry Chia Pudding

1 14-oz. can full fat coconut milk
1 cup water or apple juice
1/3 + 1 Tbs. black chia seeds
1 large apple, chopped
juice of 1/2 fresh lemon
1 cup dates, chopped
1 cup dried cherries
1/2 tsp. sea salt

In a large bowl, whisk together the coconut milk, water or juice, and chia seeds. Set aside.

In a small pan, combine the apples with the lemon juice and bring to a saut̩ Рsimmer.
Stir until the apples begin to soften.
Stir in the dates and cherries. Cover.
Season with salt and cook a few minutes until the fruit is fully soft.
Stir into the coconut chia mixture.

Refrigerate for several hours, until fully set and thickened.

Serve topped with any desired garnishes or add-ins.
