There’s something about the idea of a grilled cheese sandwich that will always make my mouth water. It’s good old comfort food.
But sometimes, you need to jazz it up a bit, other than adding a side of tomato soup for dunking.
This time, the fancy features come in the way of BBQ chicken and pineapple. Yes, that’s a THING to combine, along with the sharp, salty goodness of cheddar cheese! And guess what, this sammie isn’t even grilled, but it sure is ooey and gooey! Have at it: BBQ Chicken Cheddar Pineapple Sandwich.

BBQ Chicken Cheddar Pineapple Sandwich

Bread Dough:
1 1/2 cups water water
1 1/2 tsp. dry active yeast

3 1/4 cups all purpose flour
1 1/2 tsp. sea salt
6 oz. sharp cheddar cheese, chopped into small cubes

Combine the water and yeast and allow to bloom in a large bowl for about 10 minutes. Sift in the flour and salt. Add the cheese and stir well to combine.
Cover loosely with a kitchen towel and allow to rise for 2 hours.

BBQ Chicken:
2 lbs. boneless, skinless chicken breasts
2 cups spicy BBQ sauce

Preheat oven to 425 degrees. Put the chicken and sauce in a glass baking dish and cover with foil. Bake for about 45-60 minutes, until the chicken is cooked all the way through. Remove from the oven and shred the breasts with two forks, stirring in the cooking sauce.

Pineapple:
4-6 rings of canned pineapple

Assembly:
Preheat the oven to 450 degrees. Divide the bread dough (with floured hands) into four equal little loaves. Bake on a parchment lined baking sheet for 20 minutes (the cheese will be oozing everything – this is okay).
Remove the little loaves from the oven, slice open and fill with the BBQ chicken and a few slices of pineapple.

Wham bam- “grilled cheese” party in your mouth!
