When life give you bran flakes, you make cookies, of course!
Specifically, Blueberry Chocolate Almond Bran Cookies.

Trust me on this one….the sweet heavy texture of the bran adds an amazing component to these “can’t stop eating” cookies.

They are magical!

Oh, and so is a a hubby who steals the camera for selfies in between photos 😁

Blueberry Chocolate Almond Bran Cookies

16 Tbs. butter, room temperature
1 cup white sugar
1/2 cup brown sugar
3 large eggs
1 tsp. almond extract
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
1 1/2 cup bran flakes cereal
3 1/2 cups all purpose flour
2 cups chocolate covered dehydrated blueberries

Cream together the butter and sugars until light and fluffy.
Whip in the eggs and almond extract.
Add the baking powder, baking soda, and sea salt and beat again.
Fold in the bran flakes and the flour, mixing very, very well.
Fold in the chocolate blueberries.
Chill the dough for 30 minutes.

Preheat the oven to 375 degrees.

Line cookie sheets with parchment paper and place 1″ balls of dough on the sheets and bake for about 15 minutes.

Cool for 10-15 minutes before transferring to a cookie plate!
