And, for those who are vegan, gluten-free, and “raw,” or Paleo, Keto…you name it, Cashew Blueberry Superfood No Bake Cookies (filled with chia seeds too) will make all the difference in our day (or even in our moment).

Cashew Blueberry Superfood No Bake Cookies (Vegan, Gluten-Free)

8 Tbs. vegan butter, room temperature
1 1/2 cups Kalot Superfood Cashew Butter with Blueberries, Vanilla, & Chia
2 1/2 cups powdered sugar
1 tsp. vanilla extract
1/2 tsp. sea salt

Combine all the ingredients in the large bowl of a stand mixer.
Mix well.
Chill for several hours.

Form into 1″ sized balls.
Flatten with the back of a glass and transfer to the fridge or freezer for storage.
