So, this may just be the best pie you’ve ever had.
Do you like chocolate? Of course.
Do you love chai spice? Yes, you do. Admit it.
Do you LOVE vanilla cream cheese frosting? Um, we all do.
And, you can’t resist pie, right? Don’t like. Everyone loves pie, especially pie CRUST!!

With a homemade pie crust (best ever – I’ve been perfecting this recipe for years), a chocolate chai layer of ganache, then a layer of vanilla cream cheese frosting, and THEN a layer of chocolate chai whipped cream, there is NOT a sense that will be denied satisfaction. Bake this pie! The time and task are so worth it!

Chocolate Chai Spiced Cream Pie

Crust:
8 Tbs. butter, ice cold and cubed into 1″ pieces
2 cups all purpose flour
1 large egg
1 Tbs. vinegar
2-3 Tbs. ice water

Combine all the crust ingredients in the bowl of a large food processor.
Pulse until beady and crumbly.
Transfer to parchment paper and form into a good sized mound.
Top with another piece of parchment and roll out into an 11″ inch pie crust
Transfer to a 9″ pie plate and fold under and then flute the edges.
Preheat the oven to 425 degrees.
Fill the crust with pie weights and then bake for 20 minutes, until golden brown.
Remove from the oven and allow to cool.

Chocolate Chai Ganache:
10 oz. dark chocolate chips
1/4 cup heavy whipping cream
4 Tbs. chai latte spice mix

While the crust cools, in a medium sauce pan over very low heat, melt the chocolate with the cream and chai spice and stir constantly until smooth and melty.
Spread over the cooled pie crust.
Let this layer cool and chill for several hours.

Vanilla Cream Cheese Frosting:
8 oz. cream cheese, room temperature
1/2 cup powdered sugar
1 tsp. vanilla extract

As the Chocolate Chai Ganache is chilling on the crust, whip together the cream cheese, powdered sugar, and vanilla until soft and smooth.
Spread over the “hardened” layer of chocolate. Chill again.

Chocolate Chai Whip:
3 1/2 cups heavy whipping cream
1/3 cup unsweetened cocoa powder
3 Tbs. chai latte spice mix

Once the Vanilla Cream Cheese Frosting layer has set, in a cold bowl, whip together the cream, cocoa, and chai spice mix for 10-15 minutes, until stiff.
Slather and layer over the top of the frosting.
Chill again.

Slice and serve and INDULGE. You’ll love this. The work and time are all worthwhile.
