With leftover cherries and chocolate from the Dark Chocolate Cherry Whip Pie, I believed I had a great idea: Chocolate Cherry Pie Cookies.
It really WAS a great idea, except for the fact that when the partially frozen cherries baked, the exuding moisture led to MORE than a baking fail. Yes, #bakingfail #pinterestfail #cookiefail 😂🤣😂
Pretty hilarious.
I actually had a gut feeling this was going to happen, when feeling out the dough.

However, as I’ve been learning, nothing is truly a failure in life. We may not reach our goals, but as long as we set out to do something, we are not a failure in any way, shape, or form. Intention is everything.

And, in this case, my intention led to something SUPER DUPER wonderful.

Halfway through the baking process, I pulled the sheet of cherry chocolate mush covered pans from the oven, scooped the goo into loaf pans, and continued baking. The cookie dough transformed into loaves of sweet chocolate cherry bread. UGLY, BUT DELICIOUS.

And, as the neighbor texted me, “OMG, this is the bomb! 💣”
(I had texted and said, “Do you want some ugly but delicious Chocolate Cherry Pie Cookie Bread?”
She responded, “Who cares of it’s ugly, bring it over!” – so I did!)

Chocolate Cherry Pie Cookie Bread

16 Tbs. (2 sticks) butter, room temperature
3 large farm fresh eggs
1 cup white sugar
3/4 cup powdered sugar
2 Tbs. corn starch
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. sea salt
2 1/4 cups all purpose flour
1 1/2 cups fresh or frozen (thawed) pitted cherries, chopped
1 1/2 cup dark chocolate chunks

Preheat the oven to 375 degrees.

Cream together the butter, eggs, sugars, corn starch, baking powder and soda, vanilla, and salt until light and fluffy.
Add the flour, 1/4 cup at a time, mixing well.
Fold in the cherries and chocolate.

The dough will be more like batter, a little wet.
Line small loaf pans or one larger loaf pan with parchment or cooking spray (skip the #cookiefailure) and bake for about 45 minutes, until a toothpick inserted comes out clean.

The loaf will be purple-ish-brown, not so pretty – UGLY, BUT DELICIOUS!!!! 😃
