Cinnamon Peanut Butter Banana Chocolate Layer Cake 🐒🙊🙈🙉🐵

Peanut Butter Banana Cake:
5 large eggs
1 1/2 cups white sugar
1/2 cup brown sugar
3/4 cup smooth and creamy peanut butter
1/2 cup butter, melted
3 medium RIPE bananas, mashed
2 tsp. vanilla extract
1 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. sea salt
2 1/2 – 3 cups all purpose flour

Preheat the oven to 350 degrees.

Whip together the eggs, sugars, peanut butter, and butter until light and fluffy.
Add in the bananas and mix well.
Next, add the vanilla, cinnamon, baking soda, and salt. Mix well.
Finally, add the flour, 1/2 cup at a time, until well combined. You want the mixture to be somewhat thick (like thick cake batter or that of banana bread), but not too doughy or too runny.

Grease four 9″ cake pans with oil and line with parchment paper.

Divide the batter among the pans and bake for 35-40 minutes, until a toothpick inserted comes out clean.

Cool for several hours before investing and then wrapping each layer in plastic wrap and freezing at least overnight, if not up to 2 weeks.

Unwrap (still frozen) to frost and assemble.

Dark Chocolate Buttercream Frosting:
2 lbs. salted butter, softened to room temperature
2 cups powdered sugar
1 cup unsweetened cocoa powder (more, for a more intense chocolate flavor)
1 cup heavy cream
mini Reese’s peanut butter cups

Whip the butter until soft and creamy. Add in the powdered sugar and cocoa powder (be ready for a wicked, powdery storm) and whip until creamy. Drizzle in the cream and continue to mix until light and fluffy.

Slather each layer of the unwrapped frozen cake with the frosting (relish in the banana-peanut butter-chocolate aromas) and then stack the layers.
Frost the sides and top with the mini peanut butter cups.
