Cinnamon Sugar Peach Muffins

2 cups all purpose flour
3/4 cup white sugar
3 tsp. baking powder
1/2 tsp. sea salt

1 large egg
1/2 cup peach nectar (canned peaches + nectar are just fine)
1/2 cup whole milk
1/2 tsp. vanilla extract
3 large peaches, peeled and chopped (no pit)
2 Tbs. cinnamon sugar (1 1/2 Tbs. white sugar + 2 tsp. cinnamon – mixed well)

Preheat the oven to 375 degrees.

In a large bowl, mix together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the egg, peach nectar, whole milk, vanilla, and chopped peaches.

Combine the two mixtures, not over mixing.

Line a muffin tin with muffin liners and fill each liner 2/3 full of batter.

Bake for 20-25 minutes, until a toothpick inserted comes out clean.

While the muffins are baking, mix together the cinnamon sugar.

Once the muffins are still hot and removed from the oven, sprinkle with the cinnamon sugar.

Cool to serve.
