While the sprinkles and sparkles look more along the lines of a Mardi Gras, pre-Lenten celebration, we’ll just pretend the yellow, green, and purple decor celebrate YOU and all of yours, each and every day: yellow for your sunshine, green for your goodness, and purple for your royal heart!

Plus, it’s just an excuse to create some dark chocolate dessert cups, laced with double stuffed Oreos!

Dark Chocolate Oreo Cups

10 double stuffed Oreo cookies, processed into a mostly fine crumb
10 oz. dark chocolate (62%) chunks
1/3 cup heavy cream
colorful sprinkles

Line a muffin tin with paper, parchment, or silicone liners.
Over very low heat, melt the chocolate and cream together, stirring constantly, until thick and creamy.
Pour a layer of 1/2 the dark chocolate mixture into the bottom of each lined muffin cup.
Top with a sprinkling of the Oreo cookie crumbles.
Top with the remaining melted chocolate and colorful sprinkles.

Cool for several hours to allow to set.
