S’more is a contraction of the phrase “some more.” One early published recipe for a s’more is found in a book of recipes published by the Campfire S’mores company in the 1920s  where it was called a “Graham Cracker Sandwich.” The text indicates that the treat was already popular with both Boy Scouts and Girl Scouts. Aahhh…the good old days. I’ll take s’more graham cracker sandwiches ANY day! And, with a layer of dark chocolate chunk brownies sliding in between the honey graham – marshmallow – already chocolatey goodness – Yes, s’more please.

Dark Chocolate S’more Brownies

S’more Base:
1 sleeve honey graham crackers, finely processed
8 Tbs. butter, melted
1 cup miniature marshmallows
1/2 cup dark chocolate chunks

Brownie Layer:
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
3/4 cup brown sugar
1 1/3 cups sugar
3/4 cup butter, melted and cooled
1 tsp. vanilla extract
3 eggs
1 cup dark chocolate, chopped into 1/2″ chunks

Brûlée S’more Topping:
1 cup miniature marshmallows
1/2 cup dark chocolate chunks
2 Tbs. graham cracker crumbles

Preheat the oven to 325 degrees. Combine the honey graham crumbs with the melted butter in a food processor and whir until well combined.
Transfer to an 8×8″ pan, pressing down evenly, and bake for about 15 minutes. Remove from oven and layer with mini marshmallows and chocolate chips and return to the oven for an additional 10 minutes.

Meanwhile, prepare the brownie batter.
Place the flour, cocoa, both the sugars, the butter, vanilla, and eggs in a large bowl and mix until smooth. Add the chocolate chunks and stir to combine.

Spread the mixture over the S’more Base.

Bake for 60 minutes to 90 minutes, or until the brownie is set. Because of the ooey-gooey marshmallow magic, this process can take a while. My batch took at least 90 minutes, watching it often.

Allow to cool in the pan for 1 hour. Top with remaining mini marshmallows and chocolate chunks with a sprinkling of sugar. Using a kitchen torch, brûlée’ the tops of the marshmallows to you pleasing. Sprinkle with the remaining graham cracker crumbs.

Allow to sit and set another few hours before slicing and serving.

This calls for some ice cream, don’t you think?
