You can just barely sense the peppermint – but it’s there, nonetheless!

Double Chocolate Subtle Mint Cookies 

1 stick (8 Tbs. butter), room temperature
1 cup white sugar
½ cup brown sugar
3 large eggs
1 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. sea salt
2 cups all-purpose flour
1 1/2 cups chocolate chunks
¼ cup Peppermint Schnapps

Preheat the oven to 375 degrees.
Cream together the butter, sugars, and eggs, until light and fluffy.


Add the vanilla, baking soda, baking powder, and salt, and cream again.
Stir in the flour and mix well. Mix in the Peppermint Schnapps.


Fold in the chocolate chunks.

Form into 1″ sized balls, flatten, and place on a parchment-lined cookie sheet.

Bake for 12-15 minutes, until fragrant and just beginning to brown on the edges.

Remove from the oven and cool.
