Gluten Free Cinnamon Raisin Chocolate Chunk Cookies

2 sticks butter, softened
1/2 cup white sugar
1 cup brown sugar
1 tsp. vanilla extract
3 large eggs (or 4 small)
1/4 tsp. sea salt
1 tsp. baking soda
1 tsp. baking powder
3 cups Pamela’s Gluten-Free Artisan Baking Flour
1 cup raisins
2 cups dark chocolate chunks
1/2 tsp. ground cinnamon

Cream together the butter and sugars until nice and fluffy.
Add the vanilla and eggs and beat again until creamy and fluffed.
Add the salt, soda, powder, and flours and mix well. Fold in the remaining ingredients.

Chill for 30 minutes.

Meanwhile, preheat the oven to 350 degrees.
Once the dough has chilled, drop 1″ balls on parchment lined baking sheets and bake for about 15-20 minutes, until puffy.
