With my bounty of licorice candy, licorice sea salt, and licorice candy, I couldn’t leave my gluten-free and dairy-free diet friends hanging – I had to bake THEM some treats as well.
Thus, with a touch of this and a touch of that, I baked, yet again!
Second up (and final) from the Icelandic licorice theme:
Gluten-Free Dairy-Free Sea Salt Licorice Chocolate Candy Cookies

Oh, and the candy inside makes them extra chewy and gooey.

Gluten-Free Dairy-Free Sea Salt Licorice Chocolate Candy Cookies

16 Tbs. vegan butter, room temperature
3 large eggs
1 1/2 cups sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. licorice sea salt
2 1/2 cups Pamela’s Artisan Gluten-Free Flour
1 cup Icelandic licorice candy
1 cup sea salt licorice chocolate

Preheat the oven to 355 degrees.
Cream together the butter, sugar, and eggs, until light and fluffy.
Add the baking soda, baking powder, and sea salt. Stir well.
Gradually add in the flour and mix until well combined.
Fold in the candy and chocolate.

Let sit for 20 minutes.

Form into 1″ balls and place on parchment lined cookie sheets to bake for about 15 minutes.

Cool before devouring.
