The buttery, smooth goodness of traditional shortbread, but sweetened with honey, topped with the savory, seeded zing of everything bagel seasoning creates an amalgamation of flavors and textures worth a hearty drool. 🤤

Gluten-Free Honey Butter Everything Bagel Shortbread

1 cup (2 sticks – or 1 block) Kerrygold butter
1 cup local honey
2 cups gluten-free flour (or all-purpose flour)
1 tsp. baking powder
1 pinch sea salt
1/4 cup everything bagel seasoning

Grease a square baking dish with a touch of butter.
Sprinkle with half the everything bagel seasoning.
Set aside.

Melt the remaining (most) of the butter over low heat, along with the honey.
Once liquidy – stir in the baking powder, salt, and flour.
Work into an easy dough.

Evenly spread the dough over the seeded base of the baking dish.

Sprinkle the remaining seasoning evenly over the top of the shortbread.

Chill for at least 30 minutes.

Preheat the oven to 325 degrees.

Bake the chilled shortbread for 25 minutes or so, until fragrant and golden brown.
