My holiday favorite:

(Even better now that I have mastered my own copycat creation!)

Great Harvest Sunflower Wheat Rolls

2 tsp. yeast
2 cups warm water
¾ cup honey
1/3 cup light olive oil
1 tsp. sea salt
2 cups whole wheat flour
2 ½ – 2 ¾ cups all-purpose flour
¾ cup sunflower seeds

In a large bowl, mix together the yeast and water. 
Let sit for 10 minutes to “bloom.”

Add the honey, oil, and salt.
Lightly stir and further “bloom” for another 10 minutes.

Mix in the flours, ½ cup at a time, and then fold in the sunflower seeds.
Combine everything well.

Cover loosely and allow to rise 2-3 hours.

Next, cover with plastic wrap and refrigerate overnight.
(This step makes handling the bread dough much easier when forming into rolls).

When ready to cook, remove dough from the fridge.

Line baking sheets with parchment paper.
Form the dough into round, roll-sized balls.
Cover loosely with a towel and let sit for 2-3 hours, to rise again.

Meanwhile, preheat the oven to 400 degrees.
It’s important that the dough has proofed, and that the oven is HOT before baking.

Bake in the hot oven for 20 minutes, or so, until just beginning to brown.

Perfection for any meal!!!!
