This recipe for hearty Green Chile Chicken Parsnip Hash is full of bright, kicky flavors! We all love roasted Hatch green chiles (anytime) this time of the year and this combination of flavors creates a wonderful balance of sweet and earthy parsnips, sharp cheddar cheese, and uniquely seasoned green chile chicken sausage with fresh cilantro (and more green chile!).

Don’t be fooled – this is NOT just a breakfast or brunch recipe. Even if you do decide to top the skillet of with a perfectly runny egg, sauté these flavors together any time of day.

Green Chile Chicken Parsnip Hash

3 Tbs. butter
2 cups shredded parsnips
4 large green chile chicken sausages, sliced
sea salt and pepper
1/4 cup roasted green chiles, diced
3/4 cup coarsely grated sharp cheddar cheese
fresh cilantro

Heat a large skillet and melt the butter over medium-high heat.

Add the shredded veggies and sauté, stirring constantly, until soft.
Stir in the sliced chicken sausages and coat with remaining melted butter.
Continue stirring until the parsnips and sausage are crispy on all sides.
Season well with salt and pepper.

Stir in the green chile.

Serve topped with cheddar cheese, fresh cilantro, additional pepper, and (perhaps) fried eggs!
