One of my favorite things about my sister-in-law is her adoration of travel.
We both share the fascination with learning and experiencing other countries, seeing the world, and meeting those of another culture. We both also really cherish the opportunity to try new foods abroad.
And Alison travels A LOT.
She’s one lucky one.

On her most recent sojourn to Iceland, she brought me back a stash of wonderful Iceland goodies: licorice inspired.
My gift bag was filled with Icelandic Licorice Sea Salt, various chocolate licorice candies, and one full sea salt licorice chocolate bar.

I was astounded by the unique quality of these treats and was inspired to bake, of course.

First up: Icelandic Licorice Sea Salt Chocolate Brownies

Icelandic Licorice Sea Salt Chocolate Brownies

1 cup  butter, melted and slightly cooled
2  ΒΌ cups sugar
4 large eggs
2 tsp. vanilla extract
1 cup all purpose flour
1 cup unsweetened cocoa powder
1/2 tsp. licorice sea salt
1 cup dark chocolate chunks
1 1/2 cups Icelandic (if you can find it) chocolate licorice candies
1 tsp. licorice sea salt (for garnish)

Preheat oven to 350 degrees. Thoroughly grease an 8″x 8″ baking pan.

In a large mixing bowl, whisk together the melted butter and sugar until well combined, then whisk in the eggs and vanilla extract until fully combined. Sift in the flour, cocoa powder, chocolate chunks, candy, and salt and continue whisking until just combined, stopping to scrape down the sides of the bowl as needed.

Pour the batter into the prepared baking pan and spread it around into one even layer. Bake at 350 for 26-32 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs. Remove from the oven, sprinkle with licorice salt, and allow to cool before slicing into bars.
