I recently had a friend offer to bake me cookies.
I laughed out loud, implored him NOT to bake me anything, and responded,

“Thank you kindly, but I have cookies here, cookies there, and cookies everywhere!”

And, today I have Key Lime White Chocolate Cranberry Cookies!

Key Lime White Chocolate Cranberry Cookies

12 Tbs. butter, softened
2 large eggs
1 cup brown sugar
1/2 cup white sugar
juice and zest of 4 key limes
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. vanilla extract
1/4 tsp. sea salt
3 cups all purpose flour
1 cup white chocolate chips
1 cup dried cranberries

Preheat the oven to 350 degrees.

Beat together the butter, eggs, sugar, and lime juice and zest until light and fluffy.
Stir in the baking soda and powder, vanilla, and sea salt and then add the flour in 1/2 cup batches.
Once mostly combined, fold in the white chocolate and dried cranberries.

Chill the dough for 30 minutes.

Form into 1″ sized balls and place on a parchment lined cookie sheet. Bake for 15 minutes or so, until the edges begin to brown and crisp.
Remove from the oven and allow to cool 10 minutes on the cookie sheet.

Yummy!
