Just because you love kitty cats doesn’t mean you’re the “crazy cat lady.”
But, it does mean I bake you a special cake for your birthday. Yellow Cake with Chocolate Buttercream Frosting, filled with a Kitty Cat Crunch Surprise: Kitty Cat Surprise Cake!

Yellow Cake with Chocolate Frosting and Kitty Cat Filling

2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. sea salt
1 1/2 cups sugar
1 cup butter, softened
4 large eggs
1 Tbs. vanilla extract
3/4 cup whole milk

Heat oven to 350°. Grease and flour three 6″ round baking pans. Set aside.

Stir together flour, baking powder, and salt in bowl. Set aside.

Beat sugar and butter in bowl at medium speed, scraping bowl occasionally, until creamy. Add 1 egg at a time, beating well after each addition. Add vanilla. Add flour mixture alternately with milk, beating at low speed after each addition just until mixed.

Divide batter evenly between prepared pans. Bake 30-34 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes on cooling racks.

Loosen edge of cake by running knife around inside edge. Carefully remove cake from pan. Cool completely.

Using a biscuit cutter, remove the center of TWO of the cake layers (reserving those for yourself).
Wrap tightly in plastic wrap and freeze for several hours (or weeks), at least overnight.

Chocolate Buttercream Frosting:
1 lb. butter, room temperature
1 cup unsweetened cocoa powder
4-5 cups powdered sugar
1 Tbs. whole milk

Using a stand mixer, beat all ingredients together until smooth and well combined.

Kitty Cat Surprise Filling:
2 cups Reese’s and Hershey’s Chocolate Peanut Butter Snack Mix

Once ready to frost, unwrap the frozen cakes (freezing makes the cakes so much easier to frost).
Slather the first layer with the hole with frosting. Top with the next layer and do the same. Fill the cake with the Kitty Cat Surprise Filling. Top with the last layer of cake and frost the top and sides. Decorate with any remaining filling.
