Several weeks ago I began my love affair with KNOW Better Foods.
Grain-free, gluten-free, soy-free, crap-free foods – they have won my heart – particularly the Cereal.
The KNOW Better Cereal is crunchy, slightly sweet, and like an utterly perfect “crouton” of sorts.
After consuming the entire bag in just about one sitting (oops), I had some crumbs leftover. I decided to make the best use of the remaining goodness by creating a savory meatloaf – with a hint of the residual cinnamon-spice.

KNOW Better Meatloaf
(enough for one miniature loaf)

1/2 lb. lean ground beef
1/2 cup chopped carrots
2 tsp. olive oil
2 large eggs
1/2 cup KNOW Better Cereal crumbs-powder-leftovers (the Croutons would work perfectly as well)
1 Tbs. tomato paste
sea salt and pepper
1/2 tsp. steak seasoning

Preheat the oven to 375 degrees.
Heat the olive oil over medium heat and sauté the carrots, with a little salt and pepper, until soft and caramely.
Allow the carrots to cool and then add to a bowl with the ground beef, eggs, KNOW Better crumbs, tomato paste, salt and pepper, and steak seasoning.
Mix well with your hands.
Grease the inside of a small loaf pan and press the mixture inside.
Bake for about 40 minutes, until bubbly and brown.
