Homemade Lemon Curd for days.
Yup! That’s what I had on hand. So, of course, the only solution was to bake up something super delicious: Lemon Curd Coconut Vanilla Meltaway Cookies.

Lemon Curd Coconut Vanilla Meltaway Cookies

8 Tbs. butter (1 stick), room temperature
1 cup
Easy Lemon Curd
3 large eggs
1 tsp. vanilla extract
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
3 cups all purpose flour
1 1/2 cups sweetened shredded coconut
1 cup vanilla melting chips (meltaways)

Cream together the butter and lemon curd until well combined. Add the eggs and continue to beat until light and fluffy. Stir in the vanilla extract.
Add the baking powder, baking soda, sea salt, and flour and mix well.
Fold in the coconut shreds and melting chips.
Let sit for 20 minutes.
Form into golf ball sized mounds and refrigerate for several hours or overnight.

Preheat the oven to 350 degrees.

Line a baking sheet with parchment paper and place the chilled mounds about 1″ apart on the sheet. Bake for 15-20 minutes, until golden brown – and melting away!
