We are living in a crazy, crazy world right now.
Sometimes I think I want things to just go back to the way they were – so that I could have my sense of normalcy.
Yet, at the same time, the world needed this change. This wake-up call was and has been imperative.
Despite the yuck, the anger, the greed, the fear, and all the other nonsense this Coronavirus pandemic has evoked, we’re learning to see, recognize, and remember the great things about this world. We are bringing them back –
Now we can remember to be grateful for just the little things in life:

  • Fresh air
  • Fresh produce
  • Fresh meat and cheese, eggs, etc. Fresh food
  • Family and friends
  • Facetime
  • Toilet paper and all other paper products

Lemon Thyme Swiss Cinnamon Cheesecake

Crust:
2 packages cinnamon graham crackers
1/2 cup butter, melted

Preheat the oven to 375 degrees.

Process the crackers into crumb. Fold in the melted butter and press into the bottom of a parchment lined cheesecake pan – flat.

Bake for about 15 minutes, until aromatic and golden brown.

Filling:
2 cups white sugar
1 cup mascarpone cheese, room temperature

juice and zest of 3 fresh lemons
1/3 cup brown sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. sea salt
6 oz. sharp Swiss cheese, cut into small chunks
5 large eggs
1/4 cup flour
2 Tbs. fresh thyme + more for dusting
powdered sugar (for dusting)

As the crust cooks and cools, process together the sugars, lemon juice and zest, cheeses, vanilla, cinnamon, and salt. Purée until mostly smooth. Add the eggs flour and pulse until smooth again.

Reduce oven temperature to 250 degrees.
Bake for 2 hours at 250 degrees.
Increase the oven temperature to 350 degrees and bake 15 minutes more, until golden brown on top.

Cool thoroughly. Then, transfer to fridge and chill for several hours, making sure the cake is completely set.

Dust with fresh thyme, powdered sugar, and candied lemon, if desired.
