Fresh salsa is certainly a summertime thing, but it’s also a year-round necessity, right?
We are all blessed with the ability to obtain our frequents and our favorites year round – even when they are not in season. It’s not ideal, but it’s still really great, right?
So, let’s indulge and savor this fresh summer salsa (since it IS summer) and relish in the fact that we can make this again and again, even come winter, right?

Mango Jalpeño Pasta

Mango Jalapeño Pasta

1 recipe fresh, homemade pasta (or store-bought)
2 Tbs. extra virgin olive oil
sea salt and pepper
1 cup Fresh Mango Salsa*
1 cup feta cheese, crumbled
1/2 cup fresh cilantro, chopped

Bring a large pot of salted water to a rolling boil.
Add the fresh pasta and cook for 3-5 minutes.
Drain.
Add the butter, salt, and pepper. Cover and allow the butter to melt.
Stir well.
Top with the Fresh Mango Salsa, feta cheese, and fresh cilantro to serve.

In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime. Stir and season with salt and pepper. Let the salsa rest for at least 30 minutes before serving or topping pasta.
