Mediterranean Tahini Chicken

Mediterranean Tahini Chicken

1 Tbs. olive oil
1 large sweet potato, peeled and chopped
2 large boneless, skinless chicken breasts
sea salt and pepper
1/4 tsp. crushed red pepper flakes
1/4 cup tahini
2 Tbs. fresh parsley
1 Tbs. fresh lemon juice
1/2 cup roasted red peppers, diced
1/4 cup Greek black olive, pitted
1 large green onion, sliced

In a large skillet, heat the oil over medium heat.
Add the sweet potato and chicken, seasoning with salt and pepper.
Cover and cook, stirring occasionally, for 10-15 minutes, until the chicken is cooked through and the taters are soft. Break apart the chicken with the back of a wooden or rubber spoon.
Add the red pepper flakes, tahini, parsley, and lemon juice, (as well as any additional olive oil, if needed) and stir well.

Plate and top with roasted red peppers, olives, and sliced green onion.
