The soup is on!

Cold weather calls for warming, nourishing bowls of goodness.
This particular soup uses Fortune Udon Noodles, creamy coconut milk, and lots of mushrooms to satisfy your umami cravings 4 more 🙂 Enjoy!

Mushroom Coconut Udon Noodle Soup

2 Tbs. coconut oil
1 small shallot, finely chopped
2 cups sliced mushrooms
1 cup mushroom broth
14 oz. full fat coconut milk
1 pkg. Fortune Udon Noodles – noodles + seasoning**
2 Tbs. toasted sesame seeds
1/4 cup toasted coconut flakes

Melt the coconut oil over high heat.
Add the shallots and mushrooms and sauté until tender.
Pour in the mushroom broth and bring to a boil.
Reduce heat to a medium simmer and stir in the coconut milk.
Cook until emulsified.
Stir in the noodles and seasoning powder and allow to simmer 3-5 minutes.

Serve in bowls topped with sesame seeds and coconut flakes.

**This recipe can be made vegan by using the Original Shoyu Flavor noodles from Fortune, rather than the chicken flavor.
