Nothing exciting in terms of words today:
I had some fudge on hand AND I had some coconut flour lurking on the shelf.
I was craving something sweet and coconutty, so these cookies only made sense!
The fact that they are gluten-free and no-bake makes them even better! And, even though I was planning on just plain old “fudge” cookies, after preparing these babies, I realized the fudge was laced with sea salt caramel. Double win!!!

No-Bake Gluten-Free Sea Salt Caramel Fudge Coconut Cookies

8 Tbs. butter, softened
13 oz. sea salt caramel fudge
3 cups coconut flour
1/2 tsp. sea salt

Using a stand mixer, beat all ingredients together until smooth and creamy at first, but then with the coconut flour – a touch stiff.

Refrigerate for several hours.

Form into 1″ sized balls and place on a parchment lined cookie sheet.

Flatten the cookie balls with the back of a small glass.

Chill again for several hours.
