Sometimes things just don’t turn out the way you’d imagined or hoped.

And, for the record, although she seems rather simple, Peppa Pig is NOT easy to incarnate in cake form.
While I love to bake creative layer cakes, professional character cakes are something else altogether. They certainly are not yet my expertise.

While the eyes are all wrong and the snout and head are certainly not to scale, Peppa is missing limbs and her crown and wings don’t fit – Lotus did love her birthday cake. That’s what is most important. It was a happy and delicious celebration for my little Lotus Bug Love! 🪷💖

Vanilla White Cake and Buttercream Frosting – Peppa Pig

Vanilla White Cake:
1 1/2 cups cake flour
2 tsp. baking powder
1/2 tsp. sea salt
1/2 cup butter, room temperature
1 cup granulated sugar
1 1/2 tsp. vanilla extract
3 large egg whites, room temperature
1/2 cup whole milk, room temperature

Preheat oven to 350 degrees and grease a 9″x 12″ cake pan and then line with parchment paper.

In a medium bowl, whisk (or sift) together the dry ingredients: cake flour, baking powder, and salt. Set aside. 

Add butter and granulated sugar to a large bowl. Using a hand or stand mixer, cream together until light and fluffy, about one minute. Add vanilla and beat until incorporated. Then, add egg whites and beat until light and fluffy, about one minute.

Add the flour mixture to the butter mixture in thirds, alternating with the milk, just until each ingredient is incorporated and the batter is smooth. Do not overmix.

Pour the cake into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.

Remove pan from oven and allow to cool for 15 minutes before transferring to a wire rack to finish cooling.

Tightly wrap in plastic and freeze for several days before frosting.

Cut out into characters – or not, before frosting.

Whipped Buttercream Frosting:
2 cups salted butter, room temperature
4 cups powdered sugar
2 tsp. vanilla extract

In a large bowl, add room temperature butter and beat until creamy, about one minute.

Add vanilla and powdered sugar gradually and slowly mix until the ingredients are fully combined. Then, whip at high speed for 2-3 minutes, or until light and fluffy. 

Drizzle in food coloring drops and whip until smooth and evenly dispersed.

Slather, pipe, flower – do your thing and do your best with Peppa – or whomever, whatever you are creating. Remember, this is FUN! 🤩
