I’m still rather obsessed with Righteously Raw chocolate. Righteous Cacao. – EVERYTHING Audrey creates.

She is truly incredible.

So, remember those waxy Andes Mints we used to received with the check following dinner at many different types of restaurants?
I do – YUCK.
I’m NOT a fan of artificial mint flavor. In fact, I detest it.
Fresh mint is great – but mint flavoring, no thanks, I’ll pass. (I feel the same about apple, cherry, and strawberry – in fact, I don’t care for any artificial flavorings).
I digress.
So much better than the Andes Mints. INCREDIBLE. These bites are in no way waxy or artificially mint, but true mint chocolate. Refreshing, not too sweet, perfect after dinner palate cleanser – or anytime treat. Not cooling – but satisfactorily brilliant.

Thus, a recipe with these gems was in order.

Something raw, of course, in order to obtain the health benefits of raw chocolate and raw coconut butter
However, if you do decide to bake these bars in order to achieve melted chocolatey goodness, you will not be disappointed.

Raw Coconut Cacao Mint Dessert Bars

1/3 cup coconut oil, melted
1/3 cup full fat coconut milk
1/4 cup raw honey
1 Tbs. vanilla extract
1 1/4- 1 1/2 c. almond flour (or coconut flour – use less)
3/4 c. Righteously Raw Cacao Divine Mint Bar Bites, chopped

Whisk together liquid ingredients until well combined.  Add almond flour (coconut flour) to create dough-like consistency.  Fold in the chopped cacao.

Press into a parchment lined 9″ cake pan or square baking dish.

Chill until well set.  Cut and divide into bite-sized Raw Coconut Cacao Mint Dessert Bars!
