Yes, it’s May, and you still need hot cocoa in your life…we all need more chocolate, salted caramel, peanut butter, cookies, and yoga dogs πŸ§˜πŸΌβ€β™€οΈπŸΆπŸ’— in our lives. Trust me.

Salted Caramel Cocoa Peanut Butter Cookies

1 cup butter or shortening, room temperature
1 cup smooth peanut butter
7 oz. salted caramel chocolate hot cocoa mix
3/4 cup brown sugar
3 large eggs
1 tsp. vanilla extract
1/4 tsp. sea salt
2 1/2 cups all purpose flour

Using a stand mixer or high speed mixer, beat together the butter and peanut butter until smooth. Add the hot cocoa mix, brown sugar, eggs, vanilla, and salt. Beat again, until smooth and creamy.
Mix in the flour, 1/2 cup at a time, until well combined and forming the texture of cookie dough.

Let stand for 10 minutes.

Meanwhile, preheat the oven to 350 degrees.

Line 4 baking sheets wiht parchment paper.

Form the cookie dough into 1″ ball-rounds and flatten into discs.

Bake for 12-15 minutes, until fragrant and just beginning to brown.

Remove from oven and cool to handling temperature (that’s up to you – how long can you wait) before chowing down – or even dunking into an ice cold glass of milk!
