Seven Layer Dip is definitely a “thing.” I’ve seen it at many a party (Super Bowl, included), as a Thanksgiving appetizer, thank you my BEAUTIFUL sister, and just about anywhere and everywhere.
It’s no wonder.
This layered, spicy, flavorful, creamy, amazing dish is truly a sensation!

Of course, in the theme of my life, I waned to “Ashley-ify” it a bit. I wanted to bake the Seven Layer Mexican Dip into a “torte,” per say. I thought about calling it a “savory cheesecake,” but that simply didn’t sit right.

So, we are going with “torte.” It’s basically Seven Layer Dip, with with a Frito Corn Chip hard crust!

Seven Layer Dip Mexican Torte

Crust:
2 cups Frito Lays Corn Chips
4 Tbs. butter, cold and cubed

Layers:
1/2 lb. ground pork
2 Tbs. taco seasoning
2 Tbs. catsup

1/2 cup homemade guacamole (avocado + salsa + cilantro + sea salt)
1/2 cup sour cream
1/2 cup fresh salsa
2 Tbs. black olives, chopped
2 cups romaine lettuce, finely chopped
2 Tbs. fresh cilantro, chopped
1 cup cheddar cheese, grated

Preheat the oven to 400 degrees.

In a large food processor, pulse the Fritos chips into a coarse grind. Add the butter and pulse until crumbly.

Line a deep dish, 4-5″ springform pan with parchment and press the corn chip mixture into the bottom, evenly.
Bake 10-12 minutes, until golden brown.
Remove from the oven and allow to cool for several minutes.

Spread the sour cream over the top, evenly, and chill for several hours.

Meanwhile, brown the taco pork, mixing with the seasoning and catsup, breaking apart with the back of a spatula.
Once well combined, spread over the top of the Frito crust and chilled sour cream.
Cool, again, for 30-60 minutes.

Next, spread a generous layer of homemade guacamole over the cooled pork layer, top with chopped olives, another layer of salsa, lettuce, cheese, and fresh cilantro.

Chill again, for several hours.

Remove from the springform pan and slice and serve, or leave in the torte shape and let your guests simply dig in!

Extra corn chips (Fritos) are a-okay for dunking!
