It’s always best to pair the tang and funk of a soft cheese, like Maytag Blue (my ONLY blue cheese exception), with something sweet, like honey and butter! Then, add some spice and the goodness of bright, fresh carrots, and you’ve really got a winner side dish.

Plenty of freshly ground black pepper over these caramelized carrots, dripping in honey butter and cavorting crisp, I can see you’re already drooling. 🤤

Spicy Honeyed Carrots & Blue Cheese

4 Tbs. Kerrygold butter
2 cups shredded carrots
sea salt and pepper
2 Tbs. raw honey
1/2 tsp. cayenne pepper
1/4 cup Maytag Blue cheese, crumbled

In a small skillet or saucepan, over low heat, melt the butter.
Add the carrots. Evenly coat in the butter and season with salt and pepper.
Cover and cook for 3 minutes, until soft.
Remove cover, stirring continuously, allowing the carrots to caramelize in the fat.
After the carrots begin to brown, add the honey and cayenne pepper.
Continue stirring until brown and slightly crispy.

Serve plated with blue cheese crumbles.
