Spicy Orange Chicken Stir Fry

Spicy Orange Chicken Stir Fry

1 cup basmati rice, rinsed
2 1/2 cups water

4 Tbs. butter (or olive oil)
2 large chicken breasts, boneless and skinless
sea salt and pepper
1 tsp. ground red pepper flakes
4-6 mini sweet peppers, chopped
juice and zest of 1 fresh orange, juice rinds reserved
1 Tbs. honey
1 tsp. sesame oil

1 sprig fresh cilantro

In a medium pot, mix together the rice and water. Bring to a boil. Reduce heat to a simmer and cover, almost fully, cooking until just about done – almost all the water has absorbed. Remove from heat and cover. Let sit and fluff for 10 minutes, or so.

Meanwhile, in a large skillet, heat the butter (oil) over medium heat. Add the chicken breasts, sea salt and pepper, as well as the ground pepper flakes. Once seared on one side, flip. Cook, covered.
Add the sweet peppers, orange juice and rind, as well as the juiced peels.
Cover and cook for an additional 8-10 minutes, stirring, until the chicken is cooked through, but still very moist.

Reduce heat to a simmer and add the honey and sesame oil.

Simmer until sauce thickens.

Serve the Spicy Orange Chicken over plated rice and with a dash of fresh cilantro.
