Well, if you’re frying up some chicken and baking some homemade buns (aka Chick-fil-A), you might as well make some peach cobbler for dessert!

Oh, don’t forget the sweet tea – or bourbon.

The Palisade peaches are sweet and soft and oh, so delicious.

Peach pie is one thing, and don’t get me wrong, I love to bake pie.

But, cobbler is something else all together. It seems cozier, more quaint, somehow.
Especially when topped with homemade vanilla ice cream!

Summer Peach Cobbler

8 fresh peaches, pitted and cut into 1″chunks
1/4 apple butter (recipe coming this fall)
1/4 cup brown sugar
2 tsp. cornstarch

1 cup all purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 tsp. baking powder
1/2 tsp. salt
6 Tbs. butter, chilled and chopped into small pieces
2 Tbs. heavy cream
1 tsp. ground cinnamon

Preheat oven to 425 degrees.

In a large bowl, combine peaches, apple butter, 1/4 cup brown sugar, and cornstarch. Toss to coat evenly. Pour into a large baking dish. Bake for 10 minutes.

Meanwhile, in a large bowl, combine flour, 1/4 white sugar, remaining 1/4 cup brown sugar, baking powder, salt, adn cinnamon. Blend in butter with fingertips until the mixture becomes beady and then like a coarse meal. Stir in cream until just barely combined.

Remove the peaches from the oven after 10 minutes. Drop spoonfuls of the topping over the cooked peaches. Sprinkle with additional cinnamon and sugar, if desired. Bake until the topping is bubbly and golden, about 25-30 minutes.

Serve a la mode, of course.
