CHEERS to that! Let’s all hope life is back to normal next year.
In the mean time, we must celebrate with MAGICAL recipes.
Harry Potter has it all right.

MAGIC is the key to 2021.

While a friend gifted me the official Harry Potter cookbook, I devoured the recipes from front to back.
And, at the same time, I decided I would use the language and food combinations as inspiration for my Christmas cookies this year.

Treacle – Molasses – is my holiday favorite.

Thus, Treacle Treats: Gingerbread Almond Butter Molasses Holiday Cookies

Treacle Treats: Gingerbread Almond Butter Molasses Holiday Cookies

8 Tbs. butter, room temperature
2 cups Gingerbread Almond Butter (or almond butter + 1/4 tsp. cinnamon, 1/4 tsp. cloves,, + 1/4 tsp. vanilla, + 2 Tbs. brown sugar – mixed well)
3/4 cup molasses
3/4 cup powdered sugar
3 large eggs
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. vanilla extract
1/4 tsp. sea salt
2 1/2 -3 cups all purpose flour

Cream together the butter, almond butter, molasses, sugar, and eggs until smooth and well combined.
Add the baking powder, baking soda, vanilla, and sea salt and blend until light and fluffy.

Add the flour, 1/2 cup at a time, until thick and doughy.

Chill the dough for 1-2 hours.

Preheat the oven to 375 degrees.

Form the dough into 1″ sized balls, flatten, and then press flat, stamping with holiday cookie stamps (or not). Bake for 12-15 minutes, until golden brown and spicy fragrant.

Cool for 15-20 minutes before dunking in milk and devouring the flavors of Christmas past, Christmas present, and Christmas future.

Sometimes, it seems like out pastpresentand future are predetermined. There are somethings that are just meant to be, including the people we become.
