La Betterave Avocate Poire Trio

It just sounds better in French, right?

Everything French is just, “better,” meilleure.

A thrice tower of slick and superbly sliced beets, topped with astounding avocado, and then tiered with ready and ripe Bosc pear slivers, lemon oil, fresh basil, and coarse pepper grinds creates a trio worthy of “applaudissments.”

La Betterave Avocate Poire Trio

1 cup roasted beets, peeled and thinly sliced
1 large avocado, peeled and mashed with sea salt
1 ripe Bosc pear, thinly sliced into crescents
1 Tbs. lemon oil
fresh basil
sea salt and ground pepper

Using a round mold, biscuit cutter, or cookie cutter, arrange half the sliced beets in an even layer inside the ring cutter.
Top with half the avocado mash.
Create a third layer of freshly sliced pears.

Gently remove the ring and repeat for a second trio.

Drizzle with lemon oil, top with fresh basil, and sea salt and pepper.

Serve at room temperature.
