Move over Rice Krispie Treats. There is no snap crackle, but these cookies POP!

Remember those days of eating sugary cereal in front of the boob tube for Saturday morning cartoons?

Well, that’s NOT necessary to enjoy these amazing Vanilla Almond Butter Raisin Bran Cookies (Kellog’s will always be my go-to), but relish in the memories of childhood and the sweet scent and crunch of beloved Raisin Bran of yore and the current sweet smoothness of creamy Vanilla Almond Butter.

TWO SCOOPS!

Vanilla Almond Butter Raisin Bran Cookies

2 cups Justin’s Vanilla Almond Butter (or almond butter + 1 tsp. vanilla extract)
8 Tbs. salted butter, room temperature
16 oz. Raisin Bran cereal
3 large eggs
1 cup white sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
2 cups all purpose flour

Preheat the oven to 375 degrees.
Cream together the almond butter and butter until smooth.
Add the cereal and mix until well combined and the raisin bran flakes have “crunched” into a crumb.
Beat in the eggs, sugar, baking soda, baking powder, and sea salt.
Mix well.
Finally, add the flour, 1/2 cup at a time.
Let the batter sit for 10-15 minutes.
Using a melon baller, scoop 1″ sized “balls” of dough on to parchment lined baking sheets.
Flatten with the bottom of a juice glass.

Bake for 12-15 minutes, until golden brown.
