I grew up as a “granola head” from Boulder.
I grew up eating homemade granola and fresh yogurt every morning.

I also grew up taking pride in my food habits and love that I’ve learned to keep them up throughout my life.
Granola will have my heart forever.

And, it will for always be such a simple goodie for me.
Truly, it’s easy peasy.

This time, this granola bake became: Vanilla Salt Cranberry Nut Granola.
Yup, Vanilla Salt. It’s amazing!

Vanilla Salt Cranberry Nut Granola

8 Tbs. butter, melted
3/4 cup sugar (or honey, but I chose sugar this time)

5 cups whole grain oats
3 cups cranberry trail mix (I chose cranberry, pumpkin seed, sunflower seed, peanut this time)
2 tsp. vanilla salt

Preheat the oven to 350 degrees.
Combine the melted butter and sugar in a small pot. Bring to a simmer and heat enough to sort of dissolve the sugar.

Combine all other ingredients in a giant bowl.

Pour the sweet butter over the mixture and stir well, until all surfaces are coated.

Transfer to a parchment lined baking sheet, spreading evenly.

Bake for 1 hour, stirring every fifteen minutes.

Turn the oven off and leave inside the oven to dry out.

Remove from oven and continue stirring to mix everything well until the granola is cool enough to store – or eat a bowl warm with fresh yogurt or milk! Go to town!!

Brian really liked this one. He said, walking in from next door (his work space for COVID), “I smelled something delicious baking. I opened the door to the hall and I knew it was you.” Then, he devoured several bites ☺️.
