I adore chocolate peanut butter balls. I mean ADORE them. (aka “Buckeyes”).
As a kid, I never knew the name “Buckeye.” I simply just devoured Mom’s peanut butter balls at Christmas time – the ONE time of year she made this treat. (I like to think she made the no-bake chocolate peanut butter cookies just for me 😀 – and I’m pretty sure I’m right).

We’ve said it many, many times before, there is NOTHING on earth like the marriage of chocolate and peanut butter.

And, now we have it – in a vegan, gluten-free form!

Vegan Chocolate Chip Buckeyes (Chocolate Chip Peanut Butter Balls)

1 1/2 cups smooth and creamy peanut butter
1/2 cup vegan butter, room temperature
1/2 tsp. vanilla extract
4 cups powdered sugar
2 cups mini vegan chocolate chips

Combine the peanut butter, vegan butter, and vanilla in a large bowl with a mixer and beat until fluffy.
Mix in the powdered sugar, just a little at a time, until well incorporated. Add the mini chocolate chips in the same way.
Chill for 30 minutes.
Roll into balls and place on a parchment lined pan and chill again for several hours.
