Well, that’s a mouthful.
Vegan. Gluten-Free. No Bake. I try to satisfy everyone’s needs.
And, lemon coconut cookie rounds do the trick.
They are sweet. They are tangy. They are delicious.
Oh, and they are so easy to make!

Do it. DO IT!

Vegan Gluten-Free Lemon Coconut No Bake Cookie Rounds

16 Tbs. vegan butter, softened at room temperature
juice and zest of 2 fresh lemons
1 tsp. vanilla extract
1/4 tsp. sea salt
2 cups powdered sugar
2 cups coconut flour

Using a stand mixer, cream together all the ingredients until fairly smooth.
Form into 1″ sized balls and place on a parchment lined surface.
Flatten with the back of a parchment lined juice glass.
Chill for several hours.

Enjoy anytime, anywhere, and with anything! YUM!
