Reminiscent of Mexican Pepper Cookies, these vegan, raw, gluten-free no-bake double chocolate chunk and coconut butter cookies laced with ghost pepper salt satisfy your every craving.

And, they are kind of like a superfood: coconut butter (yep), chocolate (yep), MORE chocolate (of course), and ghost pepper salt (yes, your new best friend).

It’s sounds intimidating, maybe, but it’s not. The cookies are light and buttery (coconut butter and chocolate with a hint of sweet), but with just a hint of a kick on the back end. The complexity of ghost chili salt even has a bit of a mocha-like profile on its own, so rolled into these raw foods, superfoods allergy-friendly cookies, everything in life just seems to be perfect. (W,ell, at least everything in your mouth!)

Vegan Raw Coconut Chocolate Ghost Pepper Cookies

1 1/2 cup Binnie’s Dark Chocolate Coconut Butter or Artisana Organics Coconut Cacao Bliss
1/2 cup vegan butter, room temperature
1 cup powdered sugar
1/2 cup brown sugar
2 tsp. ghost pepper salt
1 1/2 cup dark chocolate chunks

Using a large mixer, beat together the chocolate coconut butter, vegan butter, and sugars. Add the ghost pepper salt and beat again for a minute or two. The mixture should be light and fluffy.
Fold in the chocolate chunks.
Form into 1″ sized balls and place on a parchment lined cookie sheet.
Flatten with the back of a glass.
Chill for several hours and store in the fridge.
