So, I tend to do whatever I want, whenever I want.
These tendencies are not intended to affect others in any way, shape, of form. They are simple structures and actions I’ve created for my own benefit and joy.

Well, there was this one time, when my choice to benefit myself with a meal, really ended up negatively impacting those around me.
I apologized immediately, but there was nothing to be done at that point.

Don’t judge me for my story and my choice.
Long story short: I love hardboiled eggs, and I am obsessed with the taste, texture, and health benefits of well-made kraut.
So, I mixed the two. It became one of my favorite breakfasts. Hardboiled eggs and kraut salad – served on its own or on toast with cheese or with cracker.

On this particular day in history, I had an early morning flight from PDX to SF. I chose to “pack” my breakfast of hardboiled eggs and kraut salad.
I opened the container on the plane to enjoy – it was a small plane …

Oh, those poor human beings. Both items taste amazing, but mixed together, this is not a great thing for the olfactory system.

I’m sorry. I am.
But, I am not.

Our favorite part is spending hours in our kitchen playing with different vegetable and spice combinations until we get it just right.

Of course, the fermentation process happens under our watchful eye. We monitor our batches of krauts, kimchis, and salsas carefully and on a daily basis. Once everything is tart, tasty, and ready, our team hand packs our containers—then wildbrine® is off to the stores and you. That’s it!

Go Wild wildbrine Kraut Salad Sandwich

3 large eggs, hardboiled and chilled, then peeled
2 Tbs. vegan mayonnaise
2 Tbs. stone ground mustard
2 Tbs. red onion, thinly sliced
1 tsp. celery salt
1 tsp. dill seed
sea salt and pepper
1/2 cup wildbrine Dill & Garlic Sauerkraut

Sourdough bread slices
3/4 cups shredded mozzarella cheese

Combine the peeled eggs, mayo, mustard, onion, celery salt, dill seed, and sea salt and pepper in a large bowl. Mash all together with a fork. Then, mix in the wildbrine Dill and Garlic Sauerkraut.

Eat and enjoy with a fork (on a plane) or serve over cheese toast for open faced sandwiches. Either way, the flavor, the feel, the result – it’s all amazing!
