While I “trained” myself years and years ago to like olives, there are still only a few varieties that actually suit my palette. Castlevetrano olives will always have my heart, and so will the chocolatey, dried goodness of proper Botija olives.
When mixed with the fresh and natural sweetness of Red Pepper Relish, served over rice, and with rosemary scented chicken (if desired), you’ve got one of your favorite meals heading your way!

Botija Olive Red Pepper Relish & Rice

Botija Olive Red Pepper Relish & Rice

1 cup white Jasmine rice, cooked (nice and fluffy)
1/4 cup Red Pepper Relish
1/4 cup Botija Olives
1 baked chicken breast (if desired)
1 tsp. fresh rosemary
sea salt and pepper

Serve the Jasmine rice, plated and topped with the Red Pepper Relish, Botija olives, chicken, rosemary, and sea salt and pepper.

Simple, spicy, sweet, and delicious!
